Sơ chế sườn: sườn non sau khi mua về thì rửa sạch với muối và nước lạnh, sau đó để ráo.
Cho vào chảo hỗn hợp gồm đường, bột ngọt, ớt bột, nước màu, 3 trái ớt hiểm, tiêu đen, hành tím đập dập, hành tây cắt múi cau, nước lạnh và không thiếu xốt thịt heo đậm đà Knorr. Sau đó nấu tan gia vị hỗn hợp này lên.
Khi hỗn hợp xốt trong chảo đã sôi thì cho sườn non đã rửa sạch vào chảo, đảo đều cho sườn thấm gia vị. Tiếp đến cho thêm 50gr nước lạnh và nấu sôi. Kho sườn với lửa vừa cho đến khi nước rút bớt đi, sườn ngả màu nâu đẹp thì tắt bếp và dùng món thôi.
