Khoai lang gọt sạch vỏ, thái miếng dạng que rồi ngâm vào nước muối loãng chừng 15 phút cho khoai khỏi thâm rồi vớt ra cho ráo. Nếu khoai còn ướt bạn nên dùng giấy thấm cho khoai thật khô.
Đổ khoai ra âu lớn, thêm đường nâu, gừng, ớt bột, bột tỏi (hoặc tỏi băm), muối, dầu ô liu vào trộn đều.
Làm nóng lò trước đến 220 độ C, bọc sẵn khay nướng bằng giấy bạc. Xếp khoai phủ đều lên trên khay. Đặt khay nướng vào lò nướng chừng 25-30 phút.
Làm sốt bơ để chấm khoai: bơ bổ đôi, lấy phần thịt quả và cắt nhỏ. Cho bơ vào máy xay, xay nhuyễn mịn. Thêm nước cốt chanh, muối và hạt tiêu vào trộn đều.
