Gừng thái lát mỏng. Hành lá thái khúc, sả đập dập. Lá chanh xé nhỏ, cho hết vào đĩa. Mực làm và rửa sạch để xếp trên đĩa sả. Trong chén trộn đều 1 muỗng canh nước mắm, 3 muỗng nước cốt chanh, 1.5 muỗng canh đường, 1/4 muỗng cà phê tiêu, 2 muỗng canh ớt tỏi băm, 1 muỗng canh ngò rí băm.
Nấu 1 nồi nước, chờ nước sôi, cho đĩa mực vào hấp 15 phút là mực chín. Tắt bếp, lấy đĩa mực ra, dùng dao cắt từng khoanh mực cho vừa ăn rồi dội nước sốt mắm chanh vừa pha, trộn đều lên có thể ăn.
